Ingredient overview

What Is Milk Chocolate?

This chocolate stands as one of the top favorite treats across the confectionery industry. It is a type of chocolate that is produced with a measured combination of chocolate, sugar, rich cacao butter, and milk components. This composition creates a soft, caramel-like brown shade and a unique silky texture which dissolves smoothly on the taste-buds. Unlike dark chocolate, that delivers bitter and intense flavor, milk chocolate is recognized by its creamy, velvety, and sweet taste notes.
We formulate this chocolate with top-quality cacao seeds and milk solids. What makes our chocolate exceptional is the harmony between cacao flavors and a sweet dairy profile. Milk content actually creates the signature richness and smooth texture of this chocolate. Whereas the cacao fats give natural shine and a perfect crack when eaten.
For commercial baking, the balance between cocoa and milk shapes more than taste. It influences sweetness, shine, mouthfeel, melting behavior, and how the chocolate performs from production line to finished product.

Choose the Right Chocolate Format for Every Application

All Bakers have specific production needs. An independent bakery outlet may require quick melting buttons, whereas a large baking factory may require heat-resistant chocolate chunks which maintain their structure during extreme temperatures. We offer a complete range of chocolate formats designed to align with your exact manufacturing systems.
Bulk milk chocolate drops in a heap

Chips and Drops

Uniform bite-size pieces made for measured dosing, inclusions, and controlled melting.

Our chips and drops are bite-size, identical pieces. These are intentionally created to maintain their form during intense baking process or to dissolve instantly when combined with hot mixtures:

Quick-Melting Drops

Crafted with a quick liquefaction behavior, making these drops suitable for instant dissolving during oven processing or in double boilers.

Heat-Stable Chips

Produced with less cacao butter ensuring they retain their classic droplet form inside cupcakes, breads, brownies, and cookies.

Close-up of milk chocolate shavings and curls

Shavings and Chunks

Versatile pieces for fillings, toppings, decoration, and richer chocolate bursts.

Shavings

Fine, paper-thin, and fragile curls of chocolate. Shavings are designed to apply immediately right out of the package to garnish mousse, cakes, pastries, premium coffees, and whipped cream.

Chunks

Large, coarse pieces of chopped chocolate. These pieces deliver rich chocolate flavor to cakes, brownies, pastries, and breads.

Bars and Blocks

Traditional commercial formats for portioning, grating, melting, coating, and molding.

Bars

Classic, individual, tablet-like pieces crafted for ready-to-eat consumptions, elegant coatings, and effortless shavings or flakes.

Blocks

Heavy, compact, large portions of chocolate usually supplied in 2.5 kilogram or 5 kilogram packs. Usually, industrial food production plants prefer these blocks as they are budget-friendly. Bakers may cut them into sections, grate them, or liquefy them.

Milk Compound Coating

A practical, no-temper route for coating, dipping, enrobing, and molded decorations.

It is a product for brands requiring convenient, effortless processing of chocolate excluding complex tempering steps. Produced with vegetable oils such as shea, coconut, or palm rather than cacao butter, compound chocolate softens and liquefies evenly, hardens quickly, and creates a smooth, lustrous shine. It is perfect for coating donuts, cookies, pastries breads, dipping cake pops, ice-cream bars, and moldings for decorations.

Ratio of Cacao Solids and Milk Content

The foundation of superior milk chocolate is the ideal proportion of three fundamental components: the percentage of cocoa solids, milk derivatives, and sweetener. Knowing these specific ratios guide bakers to choose the suitable format for their custom applications.

Cocoa Bean Ratio

Cocoa level indicates that how much the chocolate is pure, including both cacao solids and butter.

Regular Milk Chocolate

Typically, it has 30 to 35 percent of cocoa solids. This percentage provides a caramel-like, light brown shade, a light, tender chocolate taste, and strong sweet flavor.

With Higher Cocoa Percentage

It covers 38 to 45 percent of cocoa content. This ratio gives a deeper, darker brown color and an intense chocolate flavor while maintaining the classic creamy texture of milk.

Milk Content

Milk component provides the chocolate its signature rich, creamy flavor and smooth, velvety texture. Our recipes have 18 to 24 percent milk derivatives. Increased milk level results in a butter-like, delicate, and rich taste note, whereas moderate milk ratio allows the cacao flavor to dominate. Our chocolate features cocoa-rich fragrance along with touches of caramel and vanilla.

Liquefying Results

Excellent liquefying quality is necessary for professional bakers. 100% pure cacao fat chocolate liquefies at human body temperature which is 34 degrees Celsius to 36 degrees Celsius, and gives a silk-like feeling on the tongue.
For coating, glazing, dipping, and decorating, our chocolates liquefy into a smooth, glossy fluid without forming clumps or rough sugar residue.

Naming & compliance

What Can Legally Be Called “Milk Chocolate”?

The name on your label is regulated. In the US and the EU, “milk chocolate” must meet minimum cocoa and milk levels. Recipes below those levels — or recipes that swap cacao butter for vegetable oils — need a different name, such as “milk compound coating” or “milk chocolate flavour coating”.
Why it matters now: in December 2025 Nestlé and Pladis reformulated well-known UK bars below the legal milk chocolate minimums and relabelled them with “milk chocolate flavour coating”. In the US, Hershey faced public criticism in 2026 over claims that a classic product moved from milk chocolate to compound coating. Buyers now ask suppliers to state clearly which one they are getting.
Our approach: we supply both — real milk chocolate built on cacao butter, and milk compound coating for no-temper production — and we name each correctly on the specification sheet, so your label matches what is inside.

Milk Chocolate Minimums by Market

MarketCocoa minimumMilk minimumMilk fat minimum
United States — milk chocolate (21 CFR 163.130)10% chocolate liquor12% total milk solids3.39%
European Union — milk chocolate (Directive 2000/36/EC)25% total dry cocoa solids14% dry milk solids3.5% (and 25% total fat)
EU — milk chocolate with quality descriptors30% total dry cocoa solids18% dry milk solids4.5%
UK, Ireland, Malta — family milk chocolate20% total dry cocoa solids20% dry milk solids5%
How our recipes compare: our regular milk chocolate is formulated at 30–35% cocoa solids with 18–24% milk derivatives, and the higher-cocoa range at 38–45%. That is the range these standards are written for. Final compliance for your market is confirmed per recipe on the specification sheet.
Cocoa futures have swung from a record of about US$12,900 per tonne (December 2024) to roughly US$3,100 in March 2026. For cost planning across real and compound tiers, see our baking ingredient chocolate range.

Commercial applications

Commercial Confectionery Applications

Milk chocolate proves to be highly versatile. Its moderate, sweet taste blends perfectly with nuts, extracts, fruits, dairy creams, seasonings, and batters. Below are the ways how professional manufacturers apply our products in their multiple creations:
Chocolate-Ice-Creams-Application
01

Ice-Creams

Milk-based, creamy chocolates perform well across frozen treats. Try our premium compound coating to cover your ice-cream sticks. It solidifies immediately to form a thin, crisp outer crust when frozen bars are dipped. Additionally, bakers may swirl melted chocolate into the bases of ice-creams.

Chocolate-Donuts-Application
02

Donuts

Submerge freshly prepared donut rings into heated chocolate coating to get a shiny look which hardens neatly without clinging to wrappers.

Chocolate-Cakes-Application
03

Cakes

Apply warmed, liquid chocolate to create silky ganache coatings, dense chocolate toppings, or high-gloss finishes. Moreover, chefs may combine chocolate chunks with cake dough for a tender, fudgy burst in each serving.

Chocolate-Cupcakes-Application
04

Cupcakes

Crown your cupcakes with velvety chocolate frosting, or add chocolate chips into the dough before baking.

Glossy milk chocolate Cupcakes-Application
05

Pastries and Croissants

Load your pastries, rolls, breads, croissants, and puff pastry pockets using heat-resistant chocolate buttons or chunks which remain tender and fudgy after cooking in ovens.

FAQs

Milk Chocolate FAQs

Milk chocolate is commonly utilized in desserts, confectionery products, baking, and garnishing. It can be liquefied to create rich icings, coatings, and ice-cream coverings. The chips, drops, buttons, and chunks can be added into cupcakes, rolls, pastries, breads, and cookies.

Milk chocolate has pure cacao fat and needs tempering to harden. Whereas compound milk coating swaps pure cacao fat with plant-based oils that skip the necessity of tempering. These vegetable oils let the chocolate melt quickly and even harden instantly on desserts.

We provide 2.5-kilogram packs, 5-kilogram bags or boxes, and 20-kilogram cartons or crates. OEM and private label packing formats such as sachets, pouches, bottles, and jars are offered too for retail companies.

It contains a moderate ratio varying from 30 to 38 percent to give a rich taste. Additionally, our team can adjust cocoa level according to your specifications.

Our real milk chocolate recipes are formulated in the cocoa and milk range that US (21 CFR 163.130) and EU (Directive 2000/36/EC) standards use for milk chocolate. Milk compound coating uses vegetable oils and is named as a compound coating. We confirm the correct name for your market on the specification sheet.

Use heat-stable chips or heat-resistant buttons and chunks. They contain less cacao butter, so they keep their shape in the oven and stay fudgy after baking.

Stored at 15–18 °C with humidity under 55%, away from sun and strong odors, our milk chocolate keeps optimal quality for 12–18 months from production.
