Cake with coloured sprinkles is a great way to celebrate any party. This layered vanilla cake is light, fluffy, and melts in your mouth, deliciously filled with fun and vibrant multicolored birthday cake sprinkles, paired with the best vanilla frosting and topped with even more cake sprinkles. No celebration is complete without a sprinkle layer cake. Who doesn't love sprinkles? They are perfect for special occasions like birthday parties and celebrations.



Ingredients for the coloured sprinkles cake mix


All-purpose flour, baking powder, salt, unsalted butter, softened, granulated sugar, eggs, vanilla extract, buttermilk, at room temperature (or preferred milk), two-thirds cup of colorful sprinkles, and more can be added if desired.


How to make the colorful sprinkle cake?


Preheat the oven to 350°F, prepare two 9-inch or two 8-inch deep cake pans, line the bottoms with parchment paper, and lightly grease the sides. Set aside. In a medium-sized bowl, whisk together the flour, baking powder, and salt. Set aside. Using a mixer, beat the butter and sugar on medium-high speed for 5 minutes, until thick and fluffy, scraping the bowl as needed. Add one egg at a time, beating well after each addition. Add the vanilla and mix. Reduce the mixer speed to medium and add the flour mixture in three portions, alternating with buttermilk, mixing and blending after each addition until just combined. Add the colorful sprinkles and mix. Divide the batter evenly between the prepared cake pans, bake for 30 to 35 minutes. Once the cake is done, the surface should spring back when touched and a toothpick inserted into the center should come out mostly clean, with few moist crumbs (not wet batter). Let the cake cool in the cake pan for 10 to 15 minutes, then turn it out onto a cooling rack to cool completely before frosting.


How to assemble the colorful sprinkle cake?


Once the cake has cooled, continue frosting or place the cakes in the refrigerator, tightly wrapped in plastic wrap, until ready to frost. If it will be longer than a few days, it is best to store them in the refrigerator. Place one of the cake layers on a base or cake plate. Take 1.5 cups of vanilla frosting, add a few tablespoons of confectioners' sugar, and mix well. Sprinkle the top of the cake layer with the just-made vanilla frosting, first creating a dam around the edges ½ inch in from the border, then continuing to fill in the rest of the vanilla frosting in the center. Add the next cake layer on top.


Frost the cake with buttercream and remaining vanilla frosting (if you want to add a border, reserve some on one side), then add more cake sprinkles wherever you want for some fun pops of color! Draw a shell border on top and bottom of the cake. Then create some white chocolate hearts by melting white chocolate and using heart molds, and sprinkle with cake sprinkles. Once it's made, place them in the center of the cake as a simple, adorable decoration!
